Any dairy ingredients in the recipe can, of course, be replaced with their non-dairy alternatives.

Add the carrot, celery, water, onion, bouillon, and cauliflower to a pot, bring to a boil, and reduce the heat to let it simmer, covered, for 15 minutes. Then melt the butter in a saucepan, stirring in the salt, pepper, and flour until everything is smooth. Add the milk slowly and whisk everything together until it is brought to a boil. Stir and cook for 2 minutes and then reduce the heat once it has thickened. Stir in your cheese and hot pepper and then add this mixture to your cauliflower pot, combining everything together.

Puree your mixture in a blender until your soup is creamy. Enjoy while it’s warm.
